Break out the muffin tin, you're going to want to make these NOW. Try these cheesy, delicious potatoes as a hearty side for just about anything. It's super easy to make too.
3 tbsp butter, melted
2 tbsp Parmesan cheese
1 tsp thyme leaves
1 tsp garlic powder
salt and black pepper
8-10 gold potatoes sliced 1/16 inch thick
Preheat oven to 350°F. Meanwhile, butter muffin tin and set aside. Slice potatoes and add to large bowl with melted butter, Parmesan, garlic, and thyme. Toss to coat the potatoes. Layer the slices into the muffin cups and season with salt and pepper. Bake for 55-60 minutes or until edges have browned and potatoes are tender. Allow to rest for 5 minutes before serving. Serve with extra Parmesan and thyme.
