If you love peanut butter and/or peanut butter cups even half as much as I do, then this recipe might be what you've been waiting for. Not only are they absolutely yummy and look adorable, they're also pretty easy to make!
Here's what you'll need:
-1/2 cup butter
-1/2 cup brown sugar
-1/2 cup white sugar
-1/2 cup creamy peanut butter
-1/2 teaspoon vanilla extract
-3/4 teaspoon baking soda
-1/2 teaspoon salt
-1 1/4 cup flour
-Miniature peanut butter cups
A miniature muffin tin is also recommended.
First, start by mixing up the butter and the brown and white sugar until the mixture reaches a nice creamy consistency. Next, add the egg, peanut butter, and vanilla extract. Mix until smooth.
In a separate bowl, gently sift the dry ingredients (flour, baking soda, salt) and then very slowly add these to the butter mixture, mixing on low. A high-speed setting here (and/or dumping in all the dry ingredients at once) will result in the flour flying out of the bowl.
Once your dough is combined, it's time to start forming your cookies. Start by either using a scooper or your hands to form dough balls just big enough to fit in a miniature muffin tin. Place them in the tin and then use your thumb to press them down around the edges to create a cup shape. Bake these in a preheated oven (350-375° F) for about 8-10 minutes. Put in a miniature chocolate peanut butter cup into each cookie after removing them from the oven, then sit back and enjoy the yummy fruits of your labor.
