These Easy To Prep Freezer Meals Will Have Your Mouth Watering

I love to cook but, man, doing it every night definitely makes me exhausted. I've gotten better about doing all my meal prep one night a week so I can just toss together some delicious dinners in less time without all the cleaning. But sometimes you want a meal with a little more pizzazz. That's where these recipes come in handy.

They're called "freezer dump meals" and if you can get past the name, they're actually really great. They're easy to prepare and they can be stored in your freezer for up to three months before you cook them. All you have to do is load up a gallon-sized freezer bag with the ingredients and pop them in the freezer. Then, when you're ready for a nice, hot meal, just pull them out to thaw the night before and dump them into your slow cooker in the morning.

Ginger-Peach Chicken

Freeze these ingredients in your bag:

  • 2-lb boneless, skinless chicken thighs or breasts
  • 12-ounce bag of frozen peach slices
  • 1 red onion, sliced
  • 2 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon freshly grated ginger
  • 2 teaspoons ground coriander 

After thawing, cook them on high for 4-5 hours and serve over a bed of rice. Just peachy!

Beef Fajitas

Freeze these ingredients in your bag:

  • 2-lb boneless beef chuck shoulder roast
  • 2 bell peppers, sliced 
  • 1 small onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon honey
  • Juice from 1 lime 
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon crushed red pepper flakes

After thawing, toss them in the slow cooker on low for 8 hours. Then, shred the beef with two forks and serve with tortillas, guacamole, sour cream, or any other Mexican dish you want.

Potato and Corn Chowder

Freeze these ingredients in your bag:

  • 24-ounces red potato, diced
  • 16-ounce package frozen corn
  • 3 tablespoons all-purpose flour
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • salt and pepper to taste

You will also need:

  • 6 cups chicken stock
  • 2 tablespoons unsalted butter
  • 1/4 cup heavy cream

After thawing, pour the contents of the bag into the slow cooker with the chicken stock and mix well. After 8 hours of cooking on low, slowly stir in the butter and heavy cream and serve with a some nice, warm rolls.

Beef Stroganoff

Freeze these ingredients in your bag:

  • 1-lb stew meat
  • 1-lb sliced baby bella mushrooms
  • 1 onion, diced
  • ½ cup apple juice
  • 1 tablespoon beef stock base
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cloves garlic, minced

After adding the ingredients to your slow cooker, stir in one cup of water and cook on low for 8 hours. Then stir in one cup of sour cream and serve with egg noodles or rice.

Chicken with Apple and Sweet Potato

Freeze these ingredients in your bag:

  • 1-lb boneless chicken, cubed
  • 2 sweet potatoes, peeled and diced
  • 1 cup unsweetened apple sauce
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp apple cider vinegar
  • 1 tbsp curry powder
  • 1/2 tsp ground ginger
  • salt and pepper to taste

Cook on low for 8 hours and then serve with rice.

Chicken Alfredo

Freeze these ingredients in your bag:

  • 3-lb boneless, skinless chicken breasts
  • 2 cans cream of chicken soup
  • 1 Italian dressing mix
  • 8 oz cream cheese

Mix 2 cups of water with the ingredients and cook on low for 6-8 hours. Serve over fettucine noodles.

Split Pea Soup

Freeze these ingredients in your bag:

  • 1 lb dry split peas
  • 2 cups of diced bacon
  • 1 large yellow onion, diced
  • 1 cup celery, chopped
  • 2 cups carrots, chopped
  • 3 cloves of garlic, minced
  • 1/2 teaspoon thyme
  • 2 bay leaves

You'll also need:

  • 32 oz chicken broth

After thawing the ingredients and adding them to the slow cooker, mix in the chicken broth and 2 cups of water. Cook on low for 7-8 hours.

Meatballs and Tomato Sauce

Freeze these ingredients in your bag:

  • One bag frozen or homemade meatballs
  • 28-ounce jar crushed tomatoes
  • 2 tsp dried Italian seasoning

Cook these on high for 3-4 hours and then serve over–you guessed it–spaghetti.

Shredded Beef Tacos

Freeze these ingredients in your bag:

  • 1.5-lb chuck roast
  • 2 tsp chicken boullion
  • 1.5 tbsp chili powder
  • ½ tbsp cumin
  • ½ tsp garlic powder
  • salt and pepper to taste

Cook the ingredients with two cups of water on low for 6-8 hours. Then, shred the beef with two forks and serve with taco shells, shredded cheese, or any other favorite taco accoutrements. 

Chicken Noodle Soup

Freeze these ingredients in your bag:

  • 1-lb boneless skinless chicken breasts, cubed
  • 1/2 lb carrots, peeled and diced
  • 1 cup celery, diced
  • 1 small yellow onion, diced 
  • 1 teaspoon garlic powder 
  • 1 teaspoon dried basil 
  • 1 teaspoon dried oregano 
  • 1 bay leaf 
  • 1/4 teaspoon pepper 

You'll also need:

  • 8 oz wide egg noodles 
  • 8 cups chicken broth 

Mix the ingredients with the chicken broth in the slow cooker and cook on low for 6-8 hours. Then, add the egg noodles and let everything cook for 30 more minutes. Remove the bay leaf before serving.
